Our approach to wine is rooted entirely in this landscape. We don't try to be a library of every Italian wine; instead, we offer a curated selection that tells the story of Puglia. You will find crisp, mineral-rich Verdeca from the vineyards of Locorotondo, elegant Susumaniello rosé, and the deep, robust character of Primitivo grown in the rich, red earth near Manduria. Each glass is an introduction to a local winemaker, a specific terroir, and a tradition passed down through generations. This isn't just wine tasting; it's a conversation with the Valle d'Itria itself.

The perfect aperitivo, of course, requires the perfect accompaniment. What we serve is a simple, honest reflection of what is good and what is local. Think of creamy burrata from a caseificio just down the road in Fasano, shavings of sharp Canestrato Pugliese cheese, and a bowl of glossy, plump Bella di Cerignola olives. We pair these with taralli, the essential, crunchy bread rings of Puglia, and perhaps a drizzle of our own estate-produced olive oil. It’s a mosaic of flavours sourced not from a catalogue, but from the farms and producers who are our neighbours and friends.
